Vinification
- The berries are picked one by one during the harvest
- the estate resorts to an optical sorter to determine the best berries in term of sugar concentration
- Vinification occurs in concrete tanks.
Ageing
- To be transferred into barrels of which 50% are new for 18 to 20 months
