Vinification
- No fertilizer is used
- Duplication of buds is systematically practiced and the green harvest in years of high production to optimize the maturity of the grapes and the concentration of phenolic compounds
- To be about 18-20 days in stainless steel tanks at regular intervals with pumping over and punching down

Ageing
- To be about 18 months.
- The origin of the wood is from forests of Allier and are medium hot

Temperature: 16°C (61-62°F).
Cellaring: 5 to 20 years.
