Vineyard
- a very thin layer of clay limestone soil sitting on a bed of rock

Vinification
- Grown without chemical fertilizers with reasoned treatments, short stature, small yields
- Any overripe grapes and any over-extraction of the juice is carefully avoided

Ageing
- aged for 18 months in oak barrels with less than 50% new wood.
